Here's something we eat when we just come home from a really tough day and work and all we can think of is food. Simply microwave a bag of veggies (the inexpensive kind without extra stuff in it); when it's done add a can of beans--kidney, black, navy…doesn't really matter. Mix it all up, add your favorite spices if you want and you have a wonderful, healthful, and fast meal. Enjoy!

If you want some egg substitutes, here they are:
1/2 banana OR 1/4 cup apple sauce, OR 1/4 cup mashed soft tofu = 1 egg OR 1 tablespoon soy flour mixed with 2 tbsp water = 1 egg;  1/3 cup of flax seed blended with 1 cup water until thick and sticky = 6 eggs (will keep in fridge 5-7 days)
